Sweet Potato And Halloumi Salad

Ingredients

1 large sweet potato, cut into wedges

1T olive oil

Salt and pepper to taste

100g halloumi, sliced

2 large handfuls of spinach leaves

1/2 and avocado, sliced

2T hazelnuts, roasted

Dressing

1T olive oil

1T ME honey, melted

Juice of 1/2 lemon

Pinch of salt

 

Method

1. Preheat the oven to 200C and line a baking tray with baking paper.

2. Place the sweet potato onto the tray and toss in the oil. Season with salt and pepper. Bake for 30 minutes before removing and allowing to cool a little.

3. Whisk the dressing ingredients together and set aside.

4. Lightly wipe a frying pan with oil and fry the halloumi until browned on each side. 

5. Mix the spinach, sweet potato, avocado and haloumi together gently then top with the hazelnuts and dressing.
